49. Make dinner every night for an entire week. (1/7)




I figured that this SHOULD be an easy task, I just needed to decide on which recipes I wanted to try. Once I selected the seven recipes that I wanted to try- I went shopping so that I could have all my ingredients and not have to go to the grocery store everyday!

I decided that I would begin with turkey burgers and boy was the family pleased. . .believe it or not-this was the FIRST time that I had made my own burgers-they were delicious and I was pleasantly pleased on how easy they were!

Turkey burgers with Lemon and Tarragon

Ingredients:
1 lb. ground turkey breast
1 cup chopped fresh spinach
1/2 cup cornbread stuffing mix
1/2 tsp. salt
1/2 tsp. tarragon, crushed
1/4 tsp. garlic powder with parsley
1 tbsp. lemon juice
1 large white, lightly beaten
1 tbsp. vegetable oil
4 French rolls (I decided to use sandwich thin buns instead)
Lettuce leaves
Tomato slices

1. In large bowl, combine turkey, spinach, stuffing mix, salt, tarragon, garlic powder, lemon juice and egg white. Shape mixture into 4 patties. (I made 4 medium and 3 small patties)

2. Heat oil in large nonstick skillet over medium heat. Add patties and cook 5 minutes on each side until golden brown and done (170F)

3. Serve burgers on rolls with lettuce and tomato.
