49. Make dinner every night for an entire week. (3/7)

Okay-day three and the family was eager to find out what they would be eating. Tonight when i came home it was so cold that I thought it would be great to make: fiesta corn chili

The original recipe did not include cornbread but I decided to add the cornbread so that I could pour the fiesta corn chili over it. . .I was told later that this was a good choice. . .it's looking like the family likes mommy experimenting with new foods-YEAH!

Spicy Quick And Easy Chili

Ingredients:
1 pound ground beef
1 large clove garlic, minced
1 can (15 1/2 ounces) DEL MONTE Whole Kernel Golden Sweet Corn, drained
1 can (16 ounces) kidney beans, drained
1 1/2 cups DEL MONTE Traditional Salsa; Mild, Medium or Hot
1 can (4 ounces) diced green chiles, undrained

1. In large saucepan, brown meat with garlic; drain.

2. Add remaining ingredients. Simmer, uncovered, 10 minutes, stirring occasionally. Sprinkle with chopped green onions, if desired.

4 servings
Prep & Cook Time: 15 minutes

NOTE: I decided to make cornbread on the side and poured the chili on top. I then sprinkled with Mexican cheese and a little sour cream.
